Tribute to the humble jacket potato.
Anyone that knows me well, knows how much I LOVE potato. Particularly jacket potatoes. Even better if they've just been microwaved (I'm not that arsed about faffing around with the oven). I'd been asked for some lunch ideas and wanted to get something out quick for clients - so what better to go with?!
White potatoes are one of the most satiating carbohydrate sources you can eat so it's a great choice and coupled with a high protein (if that's your goal) topping you'll stay fuller for longer. They are EASY to cook too!
My personal preference is a microwaved potato which means it's literally just the calories from the potato, no extras. However an oven cooked jacket means you get a nice crispy skin too. Simply rub 1/2 a teaspoon of oil around the skin with your hands and a little salt if you're feeling fancy!
